My spin instructor passed this recipe on to me from Oxygen magazine. My 2-year-old daughter loves avocados which I’m so grateful for! I can’t eat them like her, but I can eat them inside of things like in this Monday’s meal easy recipe.
- Canola oil spray
- 4 egg whites
- 1/2 cup cubed avocado
- 6 halved grape tomatoes
- Chopped red onion (if desired)
In a nonstick skillet, spray canola oil. Pour in whisked egg whites and splash of water.
When eggs turn opaque, add avocado, tomatoes and onion. Flip, cook for 2 more minutes and serve.
