Fruited Curry Chicken Salad

Did you know that curry can help you fight Alzheimers and cancer?  Research shows that curcumin, a component of tumeric found in most curry powders, is a protective agent.  Eating spicy foods also helps you feel fuller.  So in this Monday’s Meal, you’ll get to use that power curry powder to add a new twist to an old favorite.  Enjoy this curry chicken salad in a whole wheat pita or lettuce wrap.

Want to get a good deal on curry?  I buy mine for under $3 at the Chinese grocery store.  Most ethnic food stores carry curry at a good price.

Fruited Curry Chicken Salad, courtesy

  • 4 skinless, boneless chicken breast halves – cooked and diced
  • 1 stalk celery, chopped
  • 1/2 onion, chopped
  • 1 small apple – peeled, cored and chopped
  • 1/3 cup golden raisins
  • 1/3 cup seedless green grapes, halved
  • 1/2 cup chopped toasted pecans
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon curry powder
  • 3/4 cup mayonnaise


In a large salad bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together, tossing to coat. Salad is ready to serve!
